Green beans with Aoste Hot Pepperoni Salami & mustard Seed dressing
Mustard Seed Dressing
200ml olive oil
1 egg yolk
1 bunch flatleaf parsley, finely chopped
1 tbsp mustard seeds
1 tbsp red wine vinegar
Black pepper
1 pack Aoste Hot Pepperoni Salami, cut into chunks
2 packets green beans, topped & tailed
Put all the dressing ingredients in a jar and shake vigorously. Blanch the beans in boiling salted water for 3 mins, then remove and pour over the mustard seed dressing (do this while the beans are still hot to allow them to absorb the flavour of the dressing better).
Season with black pepper and allow to cool. Place the chunks of Aoste Salami in a large dish and combine with the dressed beans.
